High Plains Hickory Pie
Pecans and walnuts are favorites of cowboys of all sizes. A great
dessert is this pecan pie which can be cooked in a modern oven at home or a
Dutch oven if out camping.



Ingredients:
- 2 cups walnuts or pecans chopped
- 1/2 cup whipping cream
- 1/2 cup corn syrup or molasses
- 3 large eggs, beaten
- 1 cup honey or maple syrup
- 1/2 teaspoon salt
- 1/4 cup melted butter
- 1 teaspoon vanilla extract
- 1 single pastry pie crust

Directions:
• Preheat oven to 400 degrees.
• Blend cream, molasses or corn syrup, honey or maple syrup, salt, vanilla extract and butter.
• Mix well fold in nuts and pour into the pie crust.
Bake 10 minutes then reduce heat to 350.
• Continue cooking 25-30 minutes or until a broom straw inserted in center comes out clean.
• Pie will rise at first, but will settle as it comes from oven and cools.
